A turkey breast is made up of white meat taken from the meatiest part of the turkey. When the skin is removed, it becomes ideal for a low-fat, low-sodium diet. A boneless Tom half turkey breast can measure from 33 to 36 cm (13 to 14 in.) in length and weigh from 1.5 to 1.8 kg (3.3 to 4 lb). Perfect for feeding a small family at dinner with enough left over to make lunches the next day. Tom turkey breasts are available whole, boneless, skinless or as a half-breast.

The tenderloin is the choicest morsel from the interior of the breast and it's the tenderest part with the least fat as well. The tenderloin is ideal for simple cooking, just grilled or pan fried. It can also be used in the most complex gastronomic recipes.

A turkey thigh comes from the meatiest part of the thigh. Its dark meat is a little fattier than the breast or the tenderloin, and stands up better to cooking and remains more tender. A boneless Tom turkey thigh can weigh up to 1 kg. It's available whole, boneless or skinless.

A turkey drumstick comes from the lower part of a turkey thigh. Its dark meat, a little fattier than the breast or the tenderloin, tends to dry out less during cooking and stays more tender. A Tom drumstick measures approximately 28 cm (11 in.) in length compared to a chicken drumstick that usually measures between 5 and 7.5 cm (2 to 3 in.) in length. It's offered whole.

Cooking tips for consumers


Cooking in the oven or on the BBQ is recommended for turkey breasts. The instructions below are intended for a half-breast weighing approximately 1.5 kg (3.3 lb). 

Cooking in the oven

  • Preheat the oven to 180 °C (350 °F).
  • Season the breast and place it in a roasting pan. Pour over 250 mL (1 cup) of broth.
  • Cook in the oven for 1 hour and 15 minutes until the internal temperature reaches 77 °C (170 °F).
  • Cover in aluminum foil and let rest 5 minutes before slicing.

Cooking on the BBQ

  • Bring the BBQ to medium heat and baste the grill with vegetable oil.
  • Turn off a burner and place the turkey breast on the grill over the burner that is turned off.
  • Cook 45 to 60 minutes until the internal temperature reaches 74 °C (165 °F).
  • Cover in aluminum foil and let rest 10 minutes before slicing.
